The MAXEX concept is to exploit as much as possible every single grain contained in the capsule.

To do so two things are unavoidable:

1) to properly and tightly press your coffee (so far, no sweat)

2) to do a proper pre-infusion: which, to be not a simple wetting of the cake, must be performed under high pressure.

Easy? Not really.
